Description

A fresh and zesty salad featuring grilled chicken, creamy avocado, and crunchy tortilla strips, tossed in spicy ranch dressing.

Ingredients

  • 2 Grilled Chicken Breasts, Sliced
  • 4 Cups Romaine Lettuce, Chopped
  • 1 Cup Cherry Tomatoes, Halved
  • 1 Cup Corn Kernels (Fresh or Canned)
  • 1 Avocado, Diced
  • 1/2 Cup Tortilla Strips
  • 1/2 Cup Spicy Ranch Dressing
  • Jalapeños or Chipotle Peppers (optional)
  • Black Beans (optional)

Instructions

  1. Prep the ingredients by gathering all components. Wash and dry the romaine lettuce, then chop it into bite-sized pieces.
  2. Grill the chicken for about 7-8 minutes on each side until fully cooked. Let it rest before slicing.
  3. Halve the cherry tomatoes to maximize flavor.
  4. Prepare the corn by steaming or grilling fresh corn until tender.
  5. Dice the avocado by cutting in half, removing the pit, and cubing the flesh.
  6. Combine the romaine lettuce, cherry tomatoes, corn, and avocado in a large bowl and toss gently.
  7. Add the sliced grilled chicken on top of the salad mixture.
  8. Incorporate the tortilla strips on top for added crunch.
  9. Dress the salad with spicy ranch dressing, or whisk up a homemade version.
  10. Toss all ingredients together until well combined. Season with salt and pepper to taste and serve immediately.

Notes

For best results, avoid dressing the salad too early to prevent sogginess. Customizable with various toppings and proteins.
