Description

A refreshing and vibrant Cucumber Caprese Salad featuring crisp cucumbers, sweet cherry tomatoes, creamy mozzarella, and fragrant basil, perfect for summer meals.

Ingredients

  • 2 large cucumbers
  • 1 cup cherry tomatoes
  • 8 ounces fresh mozzarella balls
  • 1/4 cup fresh basil leaves
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the cucumbers by washing them thoroughly and slicing them into rounds about 1/4 inch thick.
  2. Combine the sliced cucumbers and cherry tomatoes in a large mixing bowl.
  3. Add the fresh mozzarella balls to the bowl, cutting them in half if larger than bite-sized.
  4. Incorporate the torn fresh basil leaves into the salad.
  5. Make the dressing by whisking together the olive oil, balsamic vinegar, salt, and pepper in a small bowl.
  6. Dress the salad with the freshly made dressing.
  7. Toss gently to combine all ingredients without damaging the mozzarella.
  8. Taste the salad and adjust seasoning if necessary.
  9. Serve immediately, or refrigerate for up to 30 minutes before serving.

Notes

Serve fresh for optimal taste. If making ahead, add dressing just before serving to maintain crispness.
