Description

Delightful flaky pastry rings filled with creamy vanilla and topped with fresh blueberries, perfect for any occasion.

Ingredients

  • 1 sheet of puff pastry (thawed, about 17.3 ounces)
  • 2 cups fresh blueberries (rinsed and drained)
  • 1 egg (beaten, for egg wash)
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • Zest of 1 lemon (optional)
  • Extra powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Roll out your puff pastry sheet to about 1/4 inch thickness.
  4. Cut out shapes from the pastry using a round cookie cutter or glass.
  5. Brush each pastry ring with the beaten egg.
  6. Bake in the preheated oven for 15-20 minutes, or until puffed and golden brown.
  7. Whip together heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  8. Cool the baked rings on a wire rack.
  9. Fill each pastry ring with the prepared vanilla cream.
  10. Top with fresh blueberries.
  11. Sprinkle with lemon zest if using.
  12. Serve immediately and enjoy!

Notes

Ensure pastry remains chilled for best results and avoid overfilling to keep it crisp.
